Weekend Update: Family Edition

One of my favorite places to be is with my sisters and their kids. This weekend my husband and I traveled to the edge of the world (Imperial Beach, Ca) to accomplish just that.

Even though it was a little grey out, I decided to take my niece and cousin the the I.B. pier for memories sake. Having grown up in San Ysidro, Imperial Beach and Coronado Beach, were young Traci's beaches of choice. Going there, brought back memories of fun, carefree summers (3 fantastic months of vacation.) Those were the days.

 WHAT?!? Dreams shattered! Can you believe people were fishing in this water?!? Freaked me out! 







In addition to watching movies, chatting, laughing, it was my pleasure to slave over a hot stove for my family, I decided to make tostadas.




To make the tostadas: I made homemade corn tortillas (which is totally easy, check out this post) fried them in veggie oil, until firm.
made homemade pinto beans, re-fried them, and used them as the base for the tostada (easy as well.)
I cooked shredded chicken in tomato sauce, onions, pepper and garlic salt.
l also used romaine lettuce, panela cheese, sour cream and topped with Tapatio.
Let me tell you, this meal was de-lish! I'm still craving it, nothing beats homemade.

P.S. Considering how much I love my sisters, last night's Downton Abbey episode ripped my heart out.

OH MY GOODNESS that tostada makes my mouth water. I used to make tostadas all the time with just the retried beans and a fresh salsa. I ate it for like a week! I'll have to fight hard not to want to make some myself ... It's not so bad except for the fried tortilla, but I'd be scared for my diet if I tried! Maybe I can find a healthy way to make it :) it looks like you had a great weekend!!
